It's hard to say what I would do. (Just what you wanted to hear, huh?)
Will the top be large enough if you just leave it like it is and maybe add borders? I don't know that I would cut all those squares apart and then sash . . kinda seems like a whole lot of work and it looks sashed as it is.

You could always cut it by row and add a small touch of sashing to make up the seam allowence you are taking away by cutting? If you want to put the stitched pieces in, looks like you could cut every other row (meaning 2 rows together) to place the stitched part in. Could save the small blocks cut out to make room for the stitched part and use them to make a pillow cover? Good luck! Looks too cute!
